Corn Pakoda
Ingredients:
Frozen corn (Microwave to thaw) 1 packet
Onions 1 big
Green Chillies 4 to 5
Besan Flour
Bread Crumbs 1/4 cup (optional)
Ginger grated 1 tablespoon
Coriander
Chopped Green Onions 1 bunch
Salt
Red Chilli Powder
Water
Oil
Method:
In a food processor add the thawed corn, onions, green chilies and ginger. Process for few minutes In a bowl add the above ground mixture, besan flour, bread crumbs,chopped green onions, chopped coriander, salt and chilli powder. Add water little by little till you get the batter ready for pakoda style.
In a pan add enough oil for deep frying. When oil is heated make small balls and deep fry the corn pakodas and put it aside.
Thai Sauce
Ingredients:
Thai yellow curry paste 6 to 8 Tablespoons
Coconut Milk 1 Tin
Salt as per your taste
Red Chilli Powder as per your taste
Corn Starch Mixture (Corn Starch 2 Tablespoon + 2 Tablespoon Water)
Water 1/4 cup
Method:
In a big pan add all the above ingredients and bring to boil. At the end add the corn starch mixture and mix till the sauce becomes little thick.
Serve the curry by adding the pakodas to the sauce just before serving.
