Raita Varieties (Apple / Grapes / Carrot)


Ingredients
Curd
Apples (If making with Apples)
Grapes (If making with Grapes)
Carrots (If making with Carrots)
Coriander finely chopped
Water if needed
Salt

Seasoning:
Oil
Mustard seeds
Zeera
Uradh dhaal
Hing
Green chillies finely chopped
Curry leaves chopped

Method

Raita Base:
Take curd in a big bowl and whisk it. Add little water if it is too thick. Put a small saucepan on the stove with medium flame. Add the oil and when heated add the hing and mustard seeds. When mustard seeds start spluttering add zeera and uradh dhaal. Whe dhal turns little brown add chopped green chillies, red chillies and curry leaves. Turn off the stove once seasoning is done and mix it with whisked curd. Add salt and garnish with chopped coriander.

Apple Raita
Add the washed, peeled, cored and finely chopped apples to the Raita Base.

Grapes Raita
Add the washed and chopped grapes to the Raita Base.

Carrot Raita:
Add the peeled and finely grated carrots to the Raita Base.
