Mexican Burrito Bowl with twist

Ingredients:


1 cup cooked Brown Rice\Basmati Rice
1 cup cooked Black Beans or Canned 
1 cup chopped cilantro
Taco Seasoning
chopped mini sweet peppers
fresh lime juice
frozen corn 
Zeera/cumin seeds
red chillies


Toppings:

guacamole
salsa
sour cream


Method:


Soak black beans overnight and pressure cook it with salt. You can also use the canned black beans. Canned beans don't have to be pressure cooked.

In a sauce pan add little oil. Add cumin seeds and chillies. Add corn and cook it till the raw smell is gone and corn is slightly brown. Now add chopped sweet peppers and cook for few minutes. Add cooked black beans, taco seasoning and salt if necessary. Add cooked rice and mix well. Squeeze lemon juice as per the taste and lots and lots of chopped cilantro. Cook for 2 minutes and switch it off.

You can serve this in a bowl with  guacamole, sour cream and salsa if you like it.
