Mexican Burrito


Ingredients:

flour tortillas
1 cup cooked Black Beans or Canned 
Taco Seasoning
Taco Sauce
chopped mini sweet peppers
frozen corn 
Zeera/cumin seeds
red chillies
Mexican Cheese shredded
cooked brown rice (optional)
oil
sour cream


Method:


Soak black beans overnight and pressure cook it with salt. You can also use the canned black beans. Canned beans don't have to be pressure cooked.

In a sauce pan add little oil. Add cumin seeds and chillies. Add corn and cook it till the raw smell is gone and corn is slightly brown. Now add chopped sweet peppers and cook for few minutes. 
In a seperate pan add cooked black beans, taco seasoning and salt if necessary. Add little water. Mash beans little bit and cook till the beans are of desired consistency and switch it off.

In a pan, brush tortilla with little oil both sides and cook till it is slightly brown.

In a plate put the cooked tortilla and top it evenly with cheese. In the middle of the tortilla scoop cooked beans gravy, corn mixture, rice, sauce and some cheese on top. Now roll the tortilla and put it on the griddle or pan on a very low flame and leave it for a minute and turn to the other side and leave it for 1 more minute. Now cheese inside the tortilla is melted and tortilla is grilled enough to hold and eat. 

You can serve with sour cream.

You can serve this in a bowl with  guacamole, sour cream and salsa if you like it.
