Ingredients:
Corn tortillas
Canned black beans
Mexican cheese
Enchilada Sauce
Taco Seasoning Mix
chopped Tomatoes
chopped green onions (optional)
oil
Method:
Wash the black beans. Cook it in a saucepan with taco seasoning and little water. Mash the beans and cook it for few minutes. Make sure it is not burnt. When it is of desired consistency switch it of.
Brush tortillas both sides with little oil and cook it lightly on both sides till the rawness is gone. Take each tortilla and fill it with scoop of cooked beans,cheese and Enchilada sauce. Roll the corn tortilla like a burrito. It is OK even it is not completely closed.
In a oven safe rectangular deep dish spread Enchilada sauce evenly one the base. Now place each stuffed tortilla roll in the dish with open side down. Once all the tortillas are arranged in the oven safe dish. Spread Enchilada sauce evenly on top of the tortillas with cheese, chopped green onions and chopped tomatoes.
Back it at 350 degrees for few minutes till the tortilla is slightly browned and enchilada sauce is bubbling and cheese is melted.
Serve it warm. ENJOY!!!
