Ingredients:
Taco shells hard
Taco seasoning
Taco sauce
Mexican shredded cheese
Black beans canned/raw
chopped lettuce
chopped tomatoes
Ranch (optional)
frozen corn (optional)
chopped mini sweet peppers (optional)
cumin seeds/zeera (optional)
red chillies (optional)
Method:
If using raw Black beans, soak them over night and pressure cook it with salt. In a sauce pan, add the cooked black beans, or canned black beans, little water (not too much) and taco seasoning. Cook it for few minutes and with a masher mash the beans and cook it for some more time. Switch it off when all the water is evaporated and beans of desired consistency.
If using frozen corn, In a saucepan add little oil, add the cumin seeds and red chilies and once fried add the frozen corn, salt and cook till the corn is cooked little bit and all the raw smell is gone.
In a plate, arrange taco shells and microwave it for 30 to 40 seconds. Take them out.
Take one taco shell and scoop cooked beans, taco sauce, corn, chopped lettuce, chopped tomatoes, chopped peppers and finally ranch. Serve it immediately and enjoy.
