Ingredients:
1 cup cooked Quinoa
1 cup cooked Black Beans or Canned
1 cup chopped cilantro
Taco Seasoning
chopped mini sweet peppers
chopped green peppers
chopped green onion
fresh lime juice
frozen corn
Zeera/cumin seeds
chopped jalapeno
Method:
Soak black beans overnight and pressure cook it with salt. You can also use the canned black beans. Canned beans don't have to be pressure cooked.
In a sauce pan add little oil. Add cumin seeds. Add corn and cook it till the raw smell is gone and corn is slightly brown. Now add chopped sweet peppers, green peppers and jalapenos. Cook for few minutes. Add cooked black beans, taco seasoning and salt if necessary. Add cooked quinoa and mix well. Squeeze lemon juice as per the taste and lots and lots of chopped cilantro. Cook for 2 minutes and switch it off.
