Ingredients:
Besan flour 1 cup
Sooji 4 tablespoons
Yogurt 1/4 cup
Lemon juice (if yogurt is not used)
ENO 1 tablespoon
Salt as per taste
Sugar 1 tea spoon
Turmeric 1/4 teaspoon
Water
Seasoning
oil 2 tablespoons
mustard seeds
hing pinch
curry leaves
green chillies
sugar 1 teaspoon
grated coconut
coriander chopped
water 1/4 cup
salt pinch
Method:
Brush a microwavable square bowl with oil and put it aside. In another large bowl mix besan flour, sooji, yogurt, ENO, salt, sugar and turmeric. Add enough water to make it a batter not so thick and not so loose. It should be less thick than dosa batter. Whisk it with a whisker till no lumps. Pour this batter in the prepared microwavable bowl and microwave it on high for 5 minutes with the lid.
Take the bowl out and cut the dhokla into pieces and let it cool down a bit. Now in a small pan put oil and let it warm. Add mustard seeds, hing, chopped green chilies, curry leaves,salt and sugar and turn it off. Add 1/4 cup of water to it.
Now pour this seasoning evenly on the warm dhokla. garnish with chopped coriander and finely grated coconut.
