Creamy Broccoli and Potato Soup


Ingredients

1 - cup broccoli chopped finely
2 - potatoes(medium)
2 cups - vegetable stock
1 tablespoon - olive oil
2/3 - cup cream
salt and pepper as per taste
few broccoli florets for garnish

Method

Heat oil in stock pot, add potatoes and broccoli and cook till soft. Puree the vegetable.
Add to the pot the puree, salt, pepper and extra florets and cook over medium flame till brocolli is tender. Add the cream at the end and boil for lil while.

Remarks

Serve hot with any toasted bread. Garlic bread would be great

Alternate Easy Way

Creamy Velvety Broccoli Soup

Ingredients

1 cup - finely chopped broccoli florets
2 cups - milk
1 tablespoon butter
small piece of garlic
salt and pepper to taste
1 tablespoon maida (all purpose flour)

Method

Heat butter in a saucepan, add the flour, saute till light brown and add
chopped broccoli. Saute a little and add milk. Boil till it is thick or to ur
desired consistency. Add salt and pepper. Garnish with cooked broccoli.
