Ingredients
2 3/4 cups - maida
1 teaspoon - salt
1 teaspoon - sugar
1 tablespoon - active dry yeast
1 teaspoon - dried oregano
1/2 teaspoon- dried basil
a pinch of black pepper (powdered)
1 tablespoon - vegetable oil
1 cup - water
2 tablespoons- olive oil
jalapeno peppers thinly sliced (opt)
1 tablespoon - parmesan cheese (grated)
1 cup - mozzarella cheese
Method
Mix all the dry ingredients in a large bowl. Mix in the vegetable oil and water. Kneed the dough until smooth and elastic on a lightly foured surface.
Brush a large bowl with oil, place the dough in the bowl and coat with oil.
Cover with a damp cloth and let it rise in a warm place till the dough is doubled for about 20 to 40 min. The more it rises gives the best result.
Preheat oven to 450 degrees. Greece a baking sheet.
Punch down the dough and pat it into a 1/2 inch thick circle. Brush top with oilve oil and sprinkle parmesan and mozarella cheese. Jalapenos can be added on top.
Bake for 20 to 30 minutes or until golden brown. Serve warm with a soup or with olive oil and balsamic vinegar to dip it in.
Remarks
Fresh rosemary and thyme can be added along with other herbs. It can be rolled out flatter almost like a thick pizza crust.
Yum!! No need to buy focaccia bread again.
